Here’s what you need to prepare the lemon pound cake:
Ingredients:
- 5 eggs
- 1/3 cup melted coconut oil
- 1/3 cup maple syrup
- 1/3 cup lemon juice
- zest of 1 lemon
- ½ cup + 1 coconut flour
- ¼ cup tapioca starch
- ½ t baking soda
- Pinch salt
- 1/3 cup coconut butter, for glaze
- 2 maple syrup, for glaze
- 2 lemon juice, for glaze
Preparation:
Preheat your oven to 350℉. Put the coconut oil, eggs, lemon juice, maple syrup and lemon zest in a big bowl. Whisk well. Add the tapioca starch, coconut flour, salt and baking soda. Keep on mixing. After all the ingredients are combined, pour the mixture into a greased loaf pan and bake for 40 minutes. After the cake is baked, let it cool.
Mix the coconut butter, lemon juice and maple syrup in a small bowl to prepare the glaze. Spread the glaze on top, slice the cake and enjoy!
