Here’s what you need to prepare the pineapple cake:
- 2 cups all purpose flour
- 2 cups sugar
- 2 eggs
- 1 tsp. baking soda
- 1 tsp. vanilla
- A pinch of salt
- 1 can of crushed pineapple
- 1 cup chopped nuts
For the Cream Cheese Frosting:
- ½ cup butter
- 8 oz. softened cream cheese
- 1 tsp. vanilla
- 1 ½ cup confectioner’s sugar
- Coconut for garnish
Preparation:
Preheat your oven to 350 degrees. In a big bowl, mix all the cake ingredients. Pour the mixture into a baking pan and bake for 35-40 minutes.
While your cake is baking, beat the butter, cream cheese and vanilla until they’re creamy. Gradually add the sugar while mixing. Frost the cake while is still warm. Sprinkle with some chopped nuts and coconut.
